The slow-growing nature of Highland cattle results in flavorful beef. By raising our cattle for a minimum of 30 months, we ensure that the meat develops its full depth of flavor and tenderness. This patient, meticulous approach guarantees that every cut of our beef is a testament to its superior quality.
One of the defining features of Highland cattle is their distinctive shaggy coat, which provides natural insulation. As a result, they do not need to produce as much fat to stay warm in winter, leading to leaner meat compared to most other beef breeds. This lean meat offers a healthy yet indulgent beef experience.
